According to the Centers for Disease Control and Prevention (CDC), food allergies are a growing food safety and public health concern that affects an estimated 6% of adults and 8% of children in the United States. That’s 1 in 13 children, or about 2 students per classroom.
Each year in the United States, 3.4 million patients (about the population of Oklahoma) have a food allergy related emergency room visit. This means that every 10 seconds a food allergy reaction sends a patient to the emergency room.
The top 8 allergens are milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, and soybeans - all extremely common and hard to avoid foods. These account for about 90% of all food allergies in the United States.
